20 Minute Chicken Lo Mein

Happy Tuesday everyone! So far it’s been a busy week so I wanted to share another quick and easy meal that went from fridge to table in only 20 minutes.

Chicken Lo Mein is by far one of my favorite items from my local Chinese restaurant. My kids love it too because it’s pasta but I have never attempted a recipe like that at home. My friend recently found this recipe from the recipe critic and told me I had to try it.

So this week I finally did – and it was a slam dunk with the family. Plus dinner was done in less than 30 minutes which is the equivalent of a weeknight miracle. So if you are a fan of Chinese cuisine and like lo mein – I dare you to give this is a try. It is melt in your mouth good jam packed with flavor. Done in 30 minutes or less – here’s the recipe:

Ingredients

8 ounces lo mein noodles or spaghetti noodles (I used spaghetti)

3 cups broccoli florets

1 tbsp olive oil

8 ounces chicken

3 garlic cloves, minced

1 medium carrot, shredded

1/4 cup packed brown sugar

1/4 cup low sodium soy sauce

2 tbsp hoisin sauce

2 tsp sesame oi

1/4 tsp ground ginger

1/4 tsp crushed red pepper flakes

1/4 tsp pepper

Instructions

  1. In a large pot with boiling water, cook the noodles according to package directions. Add the broccoli for the last 5 minutes of cooking and let them cook until tender. Drain the noodles and the broccoli.
  2. While the pasta is cooking, add olive oil to a medium sized skillet. Cook the chicken until no longer pink. Add the garlic, and carrots and cook for a minute more.
  3. In a small bowl whisk together the brown sugar, soy sauce hoisin sauce, sesame oil, red pepper flakes and pepper.
  4. Add spaghetti to the skillet and pour the sauce on top and toss until incorporated.
