One of the most popular recipes on my blog to date is my mother-in-law’s Carne Guisada Recipe. It’s a type of Puerto Rican Beef Stew that is so flavorful and easy to make. It’s so good – that I wanted to share the chicken version. Pollo Guisado – or Chicken Stew, which is just as flavorful but quicker and EASIER to make. It is ready to eat in a little over thirty minutes – perfect for a busy weeknight.
Ingredients
4 oz Can of Tomato Sauce
Ladel of Sofrito
Packet of Goya Chicken Bouillon Powder
Packet of Goya Sazon Con Culantro y Achiote
4 Chicken Breasts
Olives to Taste
Potato – Cut into Tiny Cubes
Teaspoon of Oil
Pollo Guisado Recipe
Step One: Put Teaspoon of oil at bottom of the pot.
Step Two: Cut up 4 Chicken Breasts into cubes and place in pot.
Step Three: Cover chicken with large ladel of Sofrito.
Step Four: Pour packets of Chicken Bouillon and Sazon Con Culantro y Achiote onto of chicken and sofrito.
Step Five: Place 4oz tomato sauce on top.
Step Six: Cut up olives about one to two tablespoons, if desired and place in pot.
Step Seven: Add cut up potato into pot.
Step Eight: Add water – enough to cover chicken and vegetables, about one cup.
Step Nine: Cover pot and bring to a boil for about thirty minutes, until chicken is cooked through and soft.
Step Ten: Serve over white rice and ENJOY.
One of the best parts of this recipe is that it’s completely customizable – you can add other vegetables to this dish like carrots, bell peppers etc. and it is so delicious. It’s a quick & hearty meal to make this winter & I guarantee your taste buds will be jumping for joy. My kids enjoy this recipe so much they usually ask for seconds. A mom win if you ask me.
