The holidays can be a bittersweet time for me as I know it is for a lot of others. This is the time of year that I miss my mom the most, but I incorporate her in my holiday traditions by making foods that she used to make every Thanksgiving and Christmas, including this recipe. My mom’s Bourbon Sweet Potatoes is by far my favorite recipe to have for the holidays. My whole family loves it – and I guarantee it will be a hit in your house or at your next get together, for sure.
Ingredients
3 cans Sweet Potatoes (1.2 lb cans) (I use Bruce’s)
1 Cup Sugar
1/2 Tsp Vanilla Extract
1/3 Cup Bourbon
1/2 Cup Melted Butter
2 Cups Marshmallows (I use the mini marshmallows)
Directions
Boil the yams in their liquid for about 10 minutes until tender. Drain them and mash mixing in together sugar, vanilla, butter and bourbon. Place in casserole dish and pour marshmallows on top – evening them out so they cover the whole dish. Place in a 350 degree oven for about 30 minutes or until the top is nice and melted – slightly brown and bubbly. Enjoy!!
