Chelsea’s Campstove Chicken Recipe

Chicken is by far a staple in my house – my kids love it. Because we have it so often, I scour the internet to try and find different chicken recipes to change it up so we don’t have the same things over and over. I have been on the search for a different meal to serve that warms your soul on a crisp, cool Fall night and I think I found it. No internet searching needed – my good friend Chelsea is quite the cook and was nice enough to share this quick and delicious chicken recipe with us. This recipe was born and perfected about 6 or 7 years ago when Chelsea went camping with her fiancé. They now consider this recipe to be a weeknight staple, and I can see why. It is delicious and you can change it to your liking by making it with either pasta or rice, adjusting the spices to your taste or throwing in canned pineapple or peaches to balance the heat. This will be a Fall Favorite in our house, for sure!

 

Chelsea’s Campstove Chicken Recipe

1 box of your favorite pasta or rice if you prefer

2 lbs chicken (any cut, but thighs or tenderloin works best)

3 medium tomatoes or 2 cans of Rotel tomatoes with chiles

1 medium onion diced

2 cloves of garlic

paprika to taste

Cajun spice to taste

salt and pepper to taste

olive oil

 

Heat a medium sized pan with 1 to 2 tsp of olive oil. Add garlic and onion to flavor the oil and cook for 5 minutes. Add chicken and cook until no longer pink. Drain the oil and then add tomatoes and spices. For extra spiciness, use a generous amount of Cajun spice. For a sweet and spicy combination, add canned pineapples. Enjoy!
