Happy February everyone! The longest month of the year is over! February is one of my favorite months – my youngest daughter was born in February, my husband and I got married in February – and of course, Valentine’s Day. This week is going to be a little bit of a whirlwind because we have family coming to stay this weekend to celebrate my daughter’s birthday but I wanted to share with you guys the meal plan we have for this week.
Monday – Meatloaf with Mashed Potatoes and Broccoli
Tuesday – Tacos with Mexican Rice – or Taco Salad
Wednesday – Crockpot Pepper Steak – if you haven’t tried this recipe it is so flavorful and good – you will NOT have leftovers
Thursday – Spaghetti and Meatballs
Friday – Frozen Pizzas – I bought 2 Red Baron Pepperoni Pizzas – they are easy, delicious and budget friendly.
Saturday – We have family coming into town this day so the menu is a little more complicated. We are celebrating my daughter’s birthday and per her request we will have chicken cutlets, bourbon glazed salmon, king crab legs, shrimp cocktail, charcuterie, various appetizers, fruit salad and birthday cake. We do have some non-seafood eaters in the family, hence the chicken cutlets as an option.
Sunday – Super Bowl Sunday! We will have chicken wing dip, pigs in a blanket, assorted mini sandwiches (turkey and chicken salad), and the leftovers from the day before.
And that is our meal plan for the week! It is a busy week with a crazy weekend but we are looking forward to seeing family and celebrating my daughter’s 11th birthday. I CANNOT believe my baby is going to be 11. Time definitely flies.
Not including food needed for the party this weekend – our weekly grocery bill was $77. We will be eating a lot of meat from the freezer and stuff in the pantry this week.
