Hi everyone! Happy February!
Sorry it’s been kind of a bit since I last posted – January has been crazy hectic, but I am getting back on track. I did want to share my menu plan for the month of February – I am still going with a monthly menu plan. I like having the month already planned out for me in advance and then all I have to do each week is shop for the ingredients that match the meals. It has made shopping a lot easier and for that I am super thankful. So even though the month starts in the middle of the week, I planned out the first meals of February at the end of last week to make sure I had all of my groceries for my meal plan.
So here’s a peek at my meal plan – tonight (Thursday) we had lemon parmesan pork chops (pork chops dipped in lemon juice and then parmesan cheese and fried) – they were so juicy and delicious. Tomorrow we will have chicken fajitas and then spaghetti and meatballs on Saturday.

All of the meals I make are super easy, quick and flavorful – I need to be able to count on dinners that I can make in 40 minutes or less on a weeknight because there are nights when I come home late.
