I hope everyone is having a good day on this rainy Monday morning! I wanted to share my meal plan for the week – not a very typical week but it’s nice to see some ideas for cooking in the summer, so here it goes.
My Weekly Menu Plan
Monday – Mondays are my late night and I don’t get home until 8pm so I try to keep the dinner super easy. It’s going to be Buffalo Chicken in the CrockPot and we will be making sandwiches with it and have a salad on the side. You can find the recipe here.
Tuesday – Beef Shish Kabobs with peppers and onions. I found this recipe here for the marinade and it’s something I’ve never tried before but it sounds good so we’re gonna give it a shot.
Wednesday – Baked Spaghetti – I use my grandmother’s recipe which is super simple, 5 ingredients, and so delicious and something my kids love and always ask for (and I always make enough for leftovers for lunch!)
Thursday – I have been on Pinterest a lot lately and I saw this recipe with chicken, pesto, tortellini and veggies and it just looked so good and summery that I want to try it out.
Friday – Hot dogs and Hamburgers on the grill. Easy, simple and a crowd favorite for a Friday night.
Saturday – Grilled Chicken with Salad. Another easy dinner. I throw the chicken in some Italian dressing to marinade all day and then throw it on the grill. When it’s done, we cut it up and throw it on a bunch of salad. Even the kids love it.
Sunday – Out to eat.
