September has completely taken me by storm and I haven’t consistently posted in a while. Time to get back on the game. So here is another On The Menu Monday for this coming week!
Monday
I am not even gonna lie. Mama needs some assistance on Mondays because they are brutal. My husband works – picks up the kids, goes back to work and I don’t get home until 8pm. Crockpot meals are great don’t get me wrong, but I saw this in the freezer section and was all about it. The Birds Eye Voila! Frozen Family Dinners that are essentially just heated up in a skillet. I have never tried these, but am so willing to try, because we are tired, tired parents. I don’t know if we will try the Garlic chicken or the Chicken stir fry – but either way, stay tuned for a review!
Tuesday
Slow Cooker Balsamic Chicken – I used this recipe – and in my opinion this is more like a Bruschetta chicken. I served it over whole wheat angel hair pasta – and my family DEVOURED it. It was delicious – not lacking on flavor, and still healthy.
Wednesday
Tacos – Again, I use the Old El Paso Soft Taco Kit. I’ll make the ground beef when I get home and can pre cut the veggies (lettuce, tomato) in the morning before I leave for work and leave them in a zip lock in the fridge. Easy Peezy and a fan fav in my house.
Thursday
Raviolis – Again this is an easy max 30 minute meal. I used the frozen Ravioli from Walmart – 1 bag of cheese, 1 bag of meat, boil it up, throw it in a pot with some sauce, brown some garlic bread, make a salad and that’s dinner.
Friday
Pizza – Don’t Judge – this is the week of ease for me. Ordering pizza, and I will definitely enjoy my clean kitchen at the end of the night!
Saturday
Chicken Piccata– I use my own recipe in my head, but this one seems pretty close. I serve it up with rice and it is probably one of my husband’s favorite meals.
Sunday
Meatloaf. I use my dad’s recipe which include chili sauce and a lot of onions and we love it. I serve it with mashed potatoes and peas.

Just wanted to say I think your blog is awesome Morgan! I am alwayssss looking for quick, easy meals cuz no one got time for that! I mostly bake stuff ….. chicken, salmon, baked pasta dishes….it’s great cuz I can prep it the night before…set in the baking dish and put it in the oven the next night for dinner. I got lots of recipes I you’d want them!
