I love this recipe so much – it is so flavorful and so good and can be paired with just about anything (steak, chicken, pork…it works with everything). So here’s how you make it:
Ingredients:
1cup white rice (rinsed)
3 tablespoons sofrito (can be purchased in Spanish aisle, Goya makes some – but most people will tell you homemade is best)
4 oz tomato sauce
1 packet Goya Sazon con Culantro y Achiote (can be found in Spanish food aisle)
1 packet Goya Cubitos en Polvo (caldo de pollo) – essentially it’s chicken bouillon cubes also found in Spanish food aisle
1/2 can of sweet corn
Olives chopped to taste
1 cup water
Pinch of salt
Put a teaspoon of oil in the bottom of pan on low heat. In this order, add sofrito, tomato sauce, sazon and chicken bouillon packets, salt, olives, corn, then rice and water. Cook on medium low heat until rice is cooked through and tender. Last step is to ENJOY!!!
